A Tribute to Papo
Papo’s Tacos is more than a restaurant—it is a tribute to my father, Miguel, whom we lovingly called Papo.
My father’s story began in Mexico, where he grew up working the fields and learning the values of hard work, family, and perseverance. In his twenties, he came to the United States, met my mother, and together they shared nearly five decades of life and love while raising our family.

Life wasn’t always easy. At times we didn’t have much, and I wasn’t the easiest child. I left home young and spent years apart from my family, but in the end, I was given the gift of reconnecting with my family and father. Those final months we shared together before his passing were some of the most meaningful of my life. We talked, we laughed, we remembered—and we dreamed. It was then that I shared with him the idea of building a restaurant, and he encouraged me to pursue it with everything I had.
Papo was a man who would drop everything to help someone in need. He built his own landscaping company and worked tirelessly until the day his body could no longer carry him. His selflessness, his strength, and his quiet pride are what I aspire to live by. If I can become even a fraction of the man he was, I will consider myself blessed.
Papo’s Tacos was born from his encouragement, his legacy, and his love. Every taco we serve is a piece of his story—a reminder of resilience, sacrifice, and family.
And while this restaurant is for him, it is also for my family. To my mother Marla, and my siblings Miguel, Minerva, & Lee.
I hope you know how much I love you, and that this is as much your tribute as it is mine.
